ヤゴのヒミツ ~田んぼの命のストーリー~

◆泉橋酒造のシンボルマークの「赤とんぼ」は、故郷への想い

関東地方でよく見られる赤とんぼは、田んぼで生まれ育つ「田んぼの生き物」のひとつ。この赤とんぼを泉橋酒造は、シンボルマークとしております。

それは、お米を育てる時には無農薬や減農薬栽培を行うことで、赤とんぼなど生物を大切にし、環境保全型の農業を行い、未来へと持続可能な田園風景を守ることを私たちの使命と考えているから。

秋の空にたくさんの赤とんぼが飛び交う、そんな地域や国を守っていきたい、そんな思いから私たちは赤とんぼをシンボルマークとしています。

赤とんぼは日本だけでなく世界中の人々から愛されています。特に日本においては、とんぼは後退はせずに常に前へ前へと飛ぶことから「勝ち虫」とも呼ばれ、古くから愛されている縁起のよい昆虫でもあります。

◆夏の日本酒、ヤゴラベルのひみつ?

いづみ橋では「酒造りは米作りから」のもと、日本酒は田んぼから生まれる農業副産物と考え、酒蔵の本来の姿として酒米作りから取り組んでいます。そのような中、弊社のシンボルマークである赤とんぼの子ども(幼虫)にあたる「ヤゴ」は夏場の田んぼで育ちます。つまり、夏のヤゴが田んぼで健康的にすくすくと育つことができる環境作りが、実はよい酒米の栽培環境・土壌となります。泉橋酒造では、無農薬や減農薬栽培で環境保全型の農業を行うこと、つまり、夏のヤゴがたくさん育つような環境を維持することが良い米、良いお酒に繋がるはずと考え、実践しています。

そんな思いをのせた「夏の田んぼからのメッセージ」が「夏ヤゴ」ラベルのお酒です。

★赤とんぼのライフサイクルって?

・・・田んぼに水が張られると、卵はふ化し可愛いヤゴへ。

・・・13回ほど脱皮を繰り返したヤゴは、ついに「とんぼ」へと羽化します。しかし、夏の暑さが苦手な彼らは、避暑に出かけ夏場を山の上やゴルフ場などで過ごします。

・・・真っ赤に成長した「赤とんぼ」は生まれ故郷の秋の田んぼへ帰ってきます。そこで一生の伴侶を見つけ、カワイイ卵を産み、次代へ命を繋ぎます。

・・・とんぼの卵は、冬の間田んぼの土の中で越冬し、春を待ちます。

◆泉橋酒造はこんな酒蔵です 創業1857年

「酒造りは米作りから」の信念のもと、全国でも珍しい“栽培醸造蔵®”として海老名市をはじめ近隣地区での酒米の栽培から、精米そして、醸造まで一貫生産に取り組んでいます。太陽と大地の恵みをいっぱいに受けて育んだ信頼できる米を丁寧に仕込む、それが私たちの酒造りです。

いづみ橋を囲みながら仲間同士で話が弾み、杯を重ねていた・・・・そんな心地よく酔える酒を目指しています。

※栽培醸造蔵とは、農業から醸造まで行う酒蔵のこと。日本酒を農業副産物として捉え、米作りから酒造りを実践していきます。

◆泉橋酒造の米作り

泉橋酒造では自社社員による酒米の直接栽培に加え、地元の酒米生産者、JA、そして、神奈川県の農業技術センターの皆さんと共に契約栽培も行っています。主な栽培品種は「山田錦」「雄町」「神力」そして、「楽風舞」など。酒米の栽培地域は相模川左岸流域の「海老名市」「座間市」「相模原市」で約46ha余りの自社栽培、並びに契約栽培を行い、使用する原料米の9割以上を賄っています。(2021年現在)

◆泉橋酒造の酒造り

美味いお酒を醸すには、良い酒米から

ここに、泉橋酒造の哲学があります。
良い米を作るために、美味しい米を育む「土づくり」、安全で環境にやさしい「減農薬栽培」、より良い精米をするための「整粒歩合の向上」、この3点を大切にしています。田んぼや生産者ごとに精米方法や仕込み方法を変えることで、その米の特徴をもっとも活かしたお酒を醸します。

製造する日本酒は、お米と仕込み水のみで仕込む「純米酒」100%です。(純米大吟醸酒、純米吟醸酒を含む)

すべてはいづみ橋を喜んで頂くお客様のために、日本古来の伝統酒として立ち位置を守っていきます。また、仕込み方法においては、お酒と食事との良い関係を目的に伝統的な生酛造りも行い、豊かで複雑な味わいも追及しております。

◆歴史と海老名耕地の恵み

泉橋酒造の位置する「海老名耕地 えびなごうち」は、豊かな相模川が創りだした沖積平野部に広がる古来から県内随一の穀倉地域です。その始まりは大化の改新(645年)の前にとも云われ、2,000年を超える歴史があります。現代では一方では都市化も進む地域でもありますが、海老名耕地の自然の恵みをこれからも守り、美味しいお酒で表現していきたいと考えます。

◆ The symbol mark of Izumibashi, “Red Dragonfly,” is our love for the earth.

The red dragonfly, which is often seen in the Kanto region of Japan, is a representative of “rice field creatures” born and raised in rice fields. Izumibashi uses this red dragonfly as a symbol mark.

Our missions are to grow pesticide-free and pesticide-reduced rice when growing rice, to carry out agriculture that preserves the environment by valuing living things such as red dragonflies, and to protect sustainable rural landscapes for the future, we believe that.

We use red dragonflies as a symbol mark because we want to protect the regions and countries and the  earth where many red dragonflies fly in the autumn sky.

Red dragonflies are loved not only by people in Japan but also by people all over the world. Especially in Japan, dragonflies are also called “winning insects” because they always fly forward without retreating, and they are also auspicious insects that have been loved for a long time.

◆ Origin of the summer season sake, “Yago” Label?

Izumibashi’s motto is “Great sake brewing begins with great rice brewing.” We consider sake to be an agricultural by-product, and have been working on making sake rice as the original form of the sake brewery.

Our symbol mark, “Yago”, which is a child (larva) of the red dragonfly, grows in rice fields in the summer.

In other words, creating an environment where summer yago can grow healthy and quickly in rice fields is actually a good environment and soil for growing sake rice.

At Izumibashi, we believe that conducting environmentally friendly agriculture with pesticide-free and pesticide-reduced cultivation, that is, maintaining an environment where a lot of summer yago grows, will lead to good rice and good sake, we are.

The “message from the rice fields in summer” with such thoughts is the sake labeled “Summer Yago”.

★ Let’s know the life cycle of red dragonfly

【春 Haru】Spring ・ ・ ・ When the rice field is filled with water, the egg hatches and becomes a cute “Yago”, that is, a dragonfly larva.

【夏 Natsu】Summer・・・The “Yago”, which has been molted about 13 times, finally emerges as a “dragonfly”. However, they don’t like the heat of summer, so they go out to avoid the heat and spend the summer on high mountains or on cool golf courses.

【秋 Aki】Autumn ・ ・ ・ The red dragonfly that has grown bright red returns to the rice fields in autumn, where it was born. There, he finds a lifelong companion, lays cute eggs, and lives on to the next generation.

【冬 Fuyu】Winter・・・Dragonfly eggs overwinter in the soil of rice fields during the winter and wait for spring.

From Rice Cultivation to Sake Brewing

Ever since our humble beginnings in 1857 , our approach to brewing stems from the belief that good sake always begins in the rice fields. For well over a century, we have worked hard to become a brewery with the highest standards of sake rice cultivation. Our customers can rely on the quality of the product they receive, because it has been meticulously cared for from the very beginning. The flavors and aromas of our junmai sake capture the blessings of nature as the rice grain makes its journey from our fields to your glass. ◆ Izumibashi’s growing sake rice

At Izumibashi, in addition to direct cultivation of sake rice by our own employees, we also grow contracts with local sake rice producers. We also receive cooperation from JA, Kanagawa Prefecture Agricultural Technology Center, and local governments.

The main varieties are “YamadaNishiki”, “Omachi”, “Shinriki” and “Rakufumai”. Sake rice is cultivated in “Ebina City”, “Zama City” and “Sagamihara City” in the left bank of the Sagami River, and about 46ha of in-house cultivation and contract cultivation are carried out. It covers more than 90% of the ingredient  rice used. (As of 2021)

◆ Sake brewing of Izumibashi
To brew delicious sake, start with good sake rice

Here is the philosophy of Izumihashi. In order to make good rice, we value these three points: “soil making” to grow delicious rice, “pesticide-reduced cultivation” that is safe and environmentally friendly, and “improvement of grain size ratio” for better rice polishing. ..
By changing the rice polishing method and brewing method for each rice field and rice variety, we brew sake that makes the best use of the characteristics of the rice.

The sake we produce is 100% “Junmaishu(純米酒)”, which is brewed only with rice and brewed water. *Including Junmai Daiginjoshu(純米大吟醸酒) and Junmai Ginjoshu(純米酒).

We will keep our position as a traditional Japanese sake for customers who love Izumibashi.
We do not use “brewed alcohol,” which historically had to be used by breweries.

In addition, as for the method of making sake, we are pursuing a rich and complex taste by using the traditional Kimoto method(生酛造り) for the purpose of a good relationship between sake and food, based on handmade rather than mechanical manufacturing.

◆Ebina’s Alluvial Plains
Our brewery is located on the alluvial plains of Ebina City in Kanagawa Prefecture, which is an excellent location for growing sake rice. The fertile soils deposited by the great Sagami river have been treasured by the locals for more than 2000 years for producing exceptional grain crops. We will continue to safeguard the beauty and blessings of our surroundings, as we share these gifts of nature with you through our sake and specialty food products.
