This is a refreshing and dry Junmai sake, made from YAMADANISHIKI. The rice is carefully selected from paddies where fertilizer was used sparingly during cultivation, and deliberately milled to 80% of its original size to create a superior sake.
The rice fields in Ebina, which have been in existence since ancient times over 2000 years ago, have been traditionally called “Ebina Gouchi”. We aim to create a sake that naturally embodies the essence of the earth’s sun, wind, water, and soil, using locally cultivated YAMADANISHIKI, which we choose not to over-polish. With this in mind, we have named our sake “Ebina Gouchi”.
