Kakishibu (persimmon tannin)

Kakishibu (persimmon tannin) is painted on the yeast strainer vat.
It is a traditional natural paint with antiseptic and waterproof properties.
The dark brown color is due to the fact that it is painted over and over every year.
(Originally, it was a whitish wood color.)
We maintain our tools during the summer in preparation for winter sake brewing.
