Kimoto-making started today. 生酛造り
We did Yamaoroshi working with corporation of many customers. Kimoto-making started in 17th century in Japan and is one of very traditional and difficult methods. The ingredients of Kimoto are steamed rice, rice-kouji and water only. Kimoto cultivates strong yeasts naturally for 30 days.
