磨かれたお米は特に水を吸いやすく、秒単位で吸水が変わりいつも以上に気をつかいます。
水温、白米水分、湿度などを考慮し、実際の米のようすを見ながら時間を見極めます!

We’re currently brewing Kimoto Junmai Daiginjo Tonbo Label Rakufumai.
This highly polished rice absorbs water much faster, with absorption rates changing by the second, requiring extra care and attention.
We carefully monitor factors like water temperature, rice moisture content, and humidity, while closely observing the state of the rice to determine the perfect timing!
